Dwayne Lash doesn't mind taking some heat on the job.

Standing behind an enormous custom-made grill, he opens the hood to check the sizzling slabs of ribs and chicken. When he's satisfied, he uses a pair of tongs to portion them into plastic-foam containers alongside his specialty potato salad, coleslaw, collard greens, half an ear of corn and a generous chunk of cornbread.
