Blue Collar Bistro a must try

Blue Collar Bistro was a smash from the moment the restaurant opened its doors November 5.

“We did very little advertising. We opened up on a Monday and we had a line out the door,” said co-owner Chef Jake Vollmar.

Vollmar, from Fremont, opened the eatery on North Main Street with childhood friend and Clyde native Josh Harrell.

It has been busy since.

“It helped that we were local, people were willing to give us a shot and we impressed them,” Harrell said.

Blue Collar Bistro was named by Harrell's mom for a concept Vollmar had.

“I wanted to cook good quality food. I am used to working in five-star restaurants, but we wanted it to be affordable,” Vollmar said.

Vollmar has been a chef for about 10 years. Harrell managed a Marco's Pizza store. The men came together and created a diverse menu that would satisfy most foodies' taste buds.

Pizza is the backbone of the restaurant.

They have the standards, such as pepperoni pizza.

They also have specialty pies that offer something different, such as Jamaican jerk pizza, black and bleu pizza made with prime rib and duck confit pizza.

There is, however, more to the menu than pizza.

“We are not your everyday place,” Vollmar said.

There is the Blue Collar Bistro Parfait, for example.

Customers can choose from pulled pork, brisket or smoked chicken.

Their favorite meat is then layered with mashed potato, a cheese and a sauce into a delicious dinner parfait.

Blue Collar Bistro serves smokehouse specialties like ribs, brisket and pulled pork.

They serve several pasta dishes and the pasta is made in the restaurant.

Their sauces, including the barbeque sauce, are made in house as well.

There is no processed food here and that makes for healthier fare.

Harrell is proud they can list for a customer every ingredient in their food.

“Since eating this food I have felt amazingly better,” Harrell said.

These guys are on a mission to bring healthy, tasty food at affordable prices to the region.

Ambitions include either opening up a food truck or a second eatery closer to, or in, Fremont.
