Huron's pop-up coffee shop certainly experienced a successful three-week stint this spring.
Happy Day Café, opened in honor of late Shawnee Elementary School principal Satanta "Tanny" Vonthron, aimed to serve up smiles to Huron residents, as well as donated snacks and coffee.
Vonthron died March 12 after a lengthy battle with cancer.
A trio of Huron women — Elizabeth Eytchison, Stacey Hartley and Sandy Schuh — created Happy Day Café in May to commemorate Tanny's notably positive outlook, symbolized by her trademark smiley faces.
All sales have benefited a scholarship fund established in Tanny's name.
As of June 7, its last day, the café collected about $5,600 for the Satanta Vonthron Scholarship Fund, Eytchison told the Register in an email Wednesday.
"Now that's some serious happy!" Hartley said in celebration on the café's Facebook page.
