A benefit of having the Culinary Vegetable Institute in Milan is the special events that bring some of the biggest names in food to Northern Ohio.

Take for instance Chef Dave Martin (from Bravo’s “Top Chef” series) and his BBQ Bonanza & Cooking Class taking place July 30 at the Culinary Vegetable Institute.

“David Martin is going to come by and go through some cooking techniques, some fun recipes and it’s going to be just a fun little dinner as well,” said Culinary Vegetable Institute Executive Chef/Director Michael Lyons. “It is grilling but it is going to be indoors, so don’t think pig roast or things of that nature. He’s a friend and we have a good relationship with him. He’ll be showing off and demonstrating a lot of his sauces that he’s made. I’m sure he’ll be selling those as well. He’ll be showing off some BBQ techniques and highlighting vegetables from Chef’s Garden, which is really why we allow them to come here. That’s the focus.”

The Chef’s Garden, which is environmentally friendly and economically viable, grows foods with optimum quality, flavor and nutrition. It also provides vegetables to chefs all around the globe. As for the appeal of the Culinary Vegetable Institute, Lyons said the research and development kitchen brings in Chef Garden clients or chefs who want to use the product to learn how to change their menu and develop new menus.

So Martin’s plan for the BBQ Bonanza spread includes everything from French green bean salad to grilled buttermilk marinated free range chicken with his roasted poblano BBQ sauce, smokey rubbed certified angus beef brand hanger steak with groovy gorgonzola and apple cider marinated duroc pork tenderloin served with peanut sauce. There’s also summer squash and eggplant medley, butterscotch pudding with nutmeg cashews and salted cream, as well as, well, even ice cream.

“It is a unique opportunity,” Lyons said. “You’re not going to find Dave Martin hanging around other places. “

These are the type of people you find at like expo centers and food conventions and things like that. I would put him just as you would see a Lee Anne Wong or Bobby Flay. This is the type of show that people want to see.”

In fact, these types of shows happen quite frequently at Culinary Vegetable Institute. Whether it’s the monthly 7 to 8-course Earth to Table program or a 10-course tasting meal, guests never leave hungry or bored. This is why Lyons believes the BBQ Bonanza epitomizes the spirit behind the world-renowned venue.

 

“This is what Culinary Vegetable Institute is about - the top chefs in the country want to come here and play and learn,” Lyons said. “It’s a great opportunity for people to not only see what Chef’s Garden is about but also to see some of the chefs that actually use our product and care about what we’re trying to do here. It’s a chance for all of that, and they’ll get some information, some recipes, some techniques and a chance to just have fun.”
